“Going back to Mexico City, there is these quintessential tacos that you can find outside the subway stations or outside your school. And those are tacos al pastor, tacos de suadero, tacos de tripa, and tacos campechanos. So those tacos were the ones that I truly, truly miss. And that I realized wasn't a thing here that nobody was representing that menu.” — Gio
